We are a fairly large family (4 children and 2 adults) so we did the whole thing including the chicken plus we added some extra veggies like brinjal, cauliflower and brocolIi. It was a very good meal and one which we will most definitely be having again and again in the future.

I always like to use a blend of white and sweet potatoes, not only for their contrast in flavor, but color and texture as well - the white ones are a bit more starchy and creamy. Sweet potatoes alone don't seem to make everybody happy! When I make potato pancakes in a skillet I shred up a mix of the two in my food processor. This would be great to serve for a weekend breakfast or brunch, since it is packed with protein and gets a big serving of veggies in at the day's start!
