Taco Night Crunchy Casserole
Crunch into one of the easiest, and cheesiest casserole recipes out there. Taco Crunch Casserole has every thing you love about tacos, but made all in one convenient dish. Loaded with ground beef, green peppers, corn, crunched tortilla chips and cheddar cheese, make dinner a fiesta tonight. Top it with sour cream for a creamy flavor boost and it will be just like any other taco night. Hay caramba, it's good!

Ingredients
- 1 pound hamburger
- 1 onion, chopped
- 1/2 green pepper, chopped
- 8 ounces frozen sweet corn
- 2 tablespoons taco seasoning mix
- 2/3 cup water
- 8 ounces salsa
- crushed tortilla chips
- 1 1/2 cup cheddar cheese, or to taste.
Instructions

Preheat oven to 350 degrees F.

Brown hamburger, onion together. Add green onion after hamburger is browned and cook for short time.

Add corn, taco seasoning, water and salsa. Mix all together.

Spread half in casserole (11x7 or 9x13) dish.

Top with crushed chips and then shredded cheese.

Spread remaining meat mix on top - then add cheese then chips.
- Bake until it's hot. 20 minutes or so. Serve immediately with sour cream.

I thought it was a little dry. I think maybe some refried beans or more salsa may help it a bit. It needs a more savory, meaty-ness somehow. . .
