Ingredients
- 1/2 cup butter, softened
- 1 cup sour cream
- 1 egg
- 1 can (16-ounce) whole kernel corn, drained
- 1 can (16-ounce) cream style corn, undrained
- 1 package (9-ounce) corn muffin mix
- 1 cup Cheddar cheese, grated
Instructions
- Preheat oven to 375 degrees F.
- In a large bowl, mix together butter, sour cream and egg.
- Stir in cans of corn and corn muffin mix.
- Spoon mixture into buttered 2-quart casserole dish. Bake for 45 minutes.
- Add cheese; stir well.
- Cook until dish is slightly puffed, about 15 minutes.

I have tried different versions of this recipe...some got too complicated with extra ingredients! I did this the way it is written with only using frozen whole corn instead of canned and the addition of 2 T. chopped chives for color, mostly. Moist, creamy, and sweetSO YUMMY!
