Ingredients

  • 1 1/2 pound skirt steak (you can use chicken or pork)
  • 1 large Vidalia onion
  • 1 packet McCormick taco seasoning
  • 8 ounces can Mexican diced tomatoes
  • Juice of 1 lime (optional)
  • 16 ounces can of refried beans
  • Large bag of tortilla chips
  • 8 ounces bag shredded Mexican cheese
  • 1 pound Pico de Gallo
  • 4 ounces sour cream
  • Cilantro, to taste

Instructions

  1. Grill skirt steak on high heat until medium rare. Let chill in refrigerator for 24 hours.
     
  2. Take out and chop into quarter inch cubes; sauté onion in oil until soft.
     
  3. Add skirt steak to onions, mix and add McCormick taco seasoning and lime juice.
     
  4. Add diced tomatoes and slowly heat thoroughly, stirring occasionally. Simmer and set aside.
     
  5. Heat refried beans according to manufacturer instructions.
     
  6. Preheat oven to 300 degrees F.
     
  7. Cover 9x12-inch Pyrex casserole dish with tortilla chips. Add refried beans.
     
  8. Sprinkle half the bag of cheese on top of beans. Put in oven until cheese is melted. Put steak mixture over melted cheese.
     
  9. Top with fresh (we put a ton on top) Pico de Gallo, sour cream and remaining cheese.
     
  10. Garnish with cilantro and canned jalapeños.

Cilantro has a pretty strong taste. Most people either love it or hate it. If you aren't sure about it I'd use it in moderation.

seasoned cooks need to take pity on those who may have just started cooking. remember to offer help surely someone did the same for you:)

If you don't know what skirt steak and cilantro are, you shouldn't be cooking, you should be getting take out.

AndyGump - Cilantro is the leafy part of the coriander plant, sometimes called "Chinese parsley", commonly used with Mexican and Oriental food. Skirt steak is the plate, previously cheap, but now that fajitas are popular it's more expensive. It is the meat used for fajitas. Maybe if you don't have it in your area you could use flank steak? Marinate it with lime juice overnight for tenderness, grill, slice across the grain in strips.

Both skirt steak and cilantro are commonly found at any grocery store, even Walmart. Well, at least down here in the South. It you have problems finding it, I would suggest using chicken and skipping the cilantro. It is just a garnish. This is basically steak fajita nachos. Sounds yummy!

Just WHAT is a "Skirt" steak? in addition what is "cilantro" & where do you obtain it? This is one problem I have w/your recipe is you call for not so common ingredents w/o an explanation of what they are or where to obtain them.
