    Ingredients

    • 3 pounds whole frying chicken, cut into serving pieces
    • 40 cloves fresh garlic, peeled and left whole
    • 1/2 cup dry white wine
    • 1/4 cup dry vermouth
    • 1/4 cup olive oil
    • 4 ribs celery, thickly sliced
    • 2 tablespoons parsley, finely chopped
    • 2 teaspoons dried basil
    • 1 teaspoon dried oregano
    • 1 pinch of crushed red pepper
    • 1 lemon
    • salt and black pepper, to taste

    Instructions

    1. Preheat oven to 375.
       
    2. Place chicken pieces, skin side up, in a single layer in shallow baking pan.
       
    3. Combine garlic, wine, vermouth, oil, celery, parsley, basil, oregano, and red pepper in medium sized bowl; mix thoroughly.
       
    4. Sprinkle garlic mixture over chicken.
       
    5. Remove zest from lemon in thin strips; place zest throughout pan. Squeeze juice from lemon and pour over the top.
       
    6. Season with salt and pepper.
       
    7. Cover pan with aluminum foil.
       
    8. Bake 40 minutes. Remove foil and bake another 15 minutes.
       
    9. Garnish as desired.
