One Pot Slow Cooker Chicken

One Pot Slow Cooker Chicken is a creamy, comforting chicken dinner that cooks together in your slow cooker so you don't have to lift a finger from the time you put on the lid. Made with onions and kielbasa, this slow cooker favorite is hearty and filling.
This meal slowly cooks to perfection in a decadent sauce made of cream cheese, chicken stock, salt, pepper, garlic, mustard and white wine. This tasty chicken and sausage delight will make your mouth start watering from the moment you smell it cooking away all on its own. Slow Cooker Time HIGH4 hr
Ingredients
- 2 1/2 pounds boneless skinless chicken breasts
- 1 package kielbasa
- 1 (8-ounce) package cream cheese, room temperature
- 1 cup chicken stock
- 1/2 cup white wine
- 3 cloves miced garlic
- 1 yellow onion, chopped or sliced
- 2 teaspoons salt
- 1/2 teaspoon pepper
- Note: Serve over white rice or buttered noodles (optional)
Instructions

In a mixing bowl whip cream cheese with chicken stock, salt, pepper, garlic, mustard, and wine until incorporated.

Place, chicken, and sausage in the bottom of your crock pot. Place onions on top.

Pour cream cheese mixture over the top.

Cover and place on high for 4 hours, checking it occasionally to make sure it's not thickening too much. If it is, add more chicken stock or wine.

When you are ready to serve, you can place the meal in a baking dish and pop it under the broiler for a couple of minutes for some extra color. (optional)

Salt and pepper to taste, serve over rice or pasta.
Note:
If your sauce seems thinner than pictured, you can always remove the lid from your crockpot the last hour of cooking. Depending on crockpot size, brand, and if you are using fresh or frozen chicken. Results may vary slightly.

Another great dish for my new slow cooker! On Tuesday I had an afternoon full of appointments which was a perfect time to try this recipe. I used thighs instead of breasts but that is the only change made. The cream cheese is a genius addition and the whole dish is delicious. Succulent, tasty and definitely to be made and again and again!

Well, I made it tonight and it turned out great. I followed the recipe to the letter and the sauce wasn't too thick, in fact I had to thicken it at the end. I ended up making my own Dijon mustard. found a recipe online that made 2 Tbsp. and used it all.

I used chicken thighs instead of breasts (because that is what we had available) and it was really good. We added some crushed, fresh garlic for a little extra flavor and served the dish over a bed of beautiful al dente fettucini. Absolutely delicious and definitely a recipe to be repeated often in the future!

This recipe is in serious need of some color and being that there is Kielbasa I think a medley of red, green and yellow peppers slices cooked into the meat combo would really liven it up a little both in appearance and flavor. Personally, it's so hearty with the meat and creamy sauce alone I don't think I'd need the rice or pasta. Either way, it does sound delicious and regardless of how it's made you'll no doubt see full tummies.
