I love honey and I love limes so I am curious what the two would be like together, would it be a sweet and sour combination? Could you leave the chicken over night to marinate in this or would that be too strong a flavor? Does anyone have any serving suggestions for this? Would rice be too dry with the chicken?

Omigosh this sounds delicious over rice. I'm wondering if it would hurt any to leave out the soy sauce though...I'm trying to watch my sodium intake. Other than the soy sauce, this is a really healthy recipe for chicken and I love that it's marinated with citrus, so you know it's going to be full of flavor.
