Adobo
"Adobo is undeniably one of the most favorite Filipino dish. Its perfect mixture of salty, sour and sweet flavors reflect our country’s culture. I would say Philippines is not Philippines without adobo. This recipe is how we cook adobo in our place. We understand that there are many versions, so feel free to adjust with the ingredients and experiment! This recipe gives you the freedom to choose between chicken or pork, or mixed. Ingredients
- 1 tablespoon cooking oil
- 3 cloves garlic, peeled and minced
- 1 pc onion, medium sized
- 1 thumb ginger, chopped into small strips
- 500 grams chicken, cut into serving sizes
- 500 grams pork, cut into serving sizes
- 1 cup soy sauce
- 1 cup vinegar
- 1 pinch salt & pepper
- 1 tablespoon brown sugar

Heat cooking oil in a pan in medium heat. Once heated, saute garlic, onion, and ginger until light brown.

Add in the meat. Stir until the spices are fully incorporated. Cover for about 6 minutes and allow the meat to slowly cook. The meat will release its natural juice in this process, which will make adobo more flavorful. Stir occasionally to avoid meat from burning.

When the meat is cooked, put in soy sauce. Cover and allow to simmer for a few more minutes. Add the vinegar when the meat is tender. Let the mixture simmer again.

Add salt and pepper to taste. Cover and allow the sauce to reduce.

Once the sauce is reduced, season with sugar (totally optional) to balance out the flavors. Adjust the seasonings according to your taste buds. Let it simmer for 3 more minutes. (You may add a bit of water if you think it is too salty. Then just let the mixture simmer to reduce the sauce.)

When the meat is tender and fully cooked, turn off the heat. Transfer to a serving bowl and enjoy with hot rice!
