Apricot Chicken Divine
This unique apricot chicken is a delicious meal that the whole family can enjoy. The kids will love the sweetness of the apricot preserves and the creaminess of the yogurt.
Ingredients
- 2 tablespoons margarine
- 2 tablespoons olive oil
- 8 chicken breast halves, skinned
- 1/2 cup flour
- 1 teaspoon salt
- 1/2 cup apricot preserves
- 1 tablespoon Dijon mustard
- 1/2 cup nonfat yogurt
- 2 tablespoons slivered almonds
Instructions
- Preheat oven to 375 degrees F. Melt margarine with oil in a shallow baking pan.
- Meanwhile, shake chicken in a plastic bag filled with flour and salt until chicken is coated. Place chicken in a single layer in the baking pan and bake for 25 minutes.
- Combine apricot preserves, mustard, and yogurt. Spread apricot mixture on chicken and bake for 30 minutes more or until done Just before serving, brown almonds lightly and sprinkle almonds over chicken and serve over rice.

This recipe sounds very tasty and I plan on making it asap ... But ... I must say that to a person who is new to cooking and following recipes , 2 margarine and 2 olive oil can be misleading ... 2 what ? Teaspoons or Tablespoons or 2 packs of margarine and 2 cupsbottles of olive oil ??? Believe me when I say some people really have no consept when it comes to cooking . I've had some people who all but couldn't understand a recipe if I drew them a picture and they still couldn't follow the instructions ... Thank you for listening to my opinion .
