Arroz Con Pollo
Ingredients
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper
- 1/4 cup seeded and finely chopped tomato
- 2 tsps olive or vegetable oil
- 2 garlic cloves, minced
- 1-1/2 cups water
- 1 packet instant chicken broth and seasoning mix
- 1 tsp rinsed drained capers
- 3 large pimento-stuffed green olives, cut into halves
- 1/2 cup uncooked long-grain rice
- 2 chicken breasts, skinned
- 1 tsp chopped fresh parsley or cilantro
- 1/8 tsp pepper
- 1/8 tsp ground cumin
Instructions
In a large skillet, saute onion, bell pepper, tomato and garlic in oil until softened. Add water, broth mix, capers and olives until mixture comes to a boil. Stir in rice and cover. When rice is about half done, add chicken and seasonings. Cook until chicken is tender and rice is cooked. Adjust seasonings. Serves 2.
