    Bacon Fried Chicken

    There are many of us who say that everything is better with bacon, and this fried chicken recipe is no exception! The flavor that the bacon fat infuses the chicken with is delicious, and the whole fried chicken recipe tastes just great!

    Ingredients

    • 8 rashers (slices) of bacon
    • 3 pounds frying chicken, cut into serving pieces
    • salt, to taste
    • freshly ground pepper, to taste
    • 3 tablespoons flour
    • 1 1/2 cup light cream
    • 1 dash Tabasco sauce
    • 2 tablespoons brandy

    Instructions

    1. Cook the bacon till it is done to your taste. Transfer to absorbent paper and keep it warm.
       
    2. Flour the chicken pieces and brown them well in the bacon fat over brisk heat, adding the white meat last.
       
    3. Season to taste and reduce the heat to simmer.
       
    4. Continue cooking, turning occasionally, till the chicken is tender.  Transfer to a hot platter.
       
    5. Pour off all but 3 tablespoons of the fat and add the flour. Blend well and cook about 3 minutes.
       
    6. Gradually stir in the cream and continue stirring till it is nicely thickened.
       
    7. Season well with pepper and a dash of Tabasco and add the brandy.
       
    8. Let it cook up for a moment and serve with the chicken. Also serve little new potatoes and salad.

    Ok, what do you do with the "warm" bacon? Bob from Bend, Or.

    My Mom was from the south, and taught me so save bacon drippings for fried chicken. I use half crisco and half bacon fat for frying, then put the chicken in a 300 degree oven. The gravy is the same except for the brandy.

    I would like to know how you serve the bacon you are keeping warm. I save my bacon grease so wouldn't need to cook bacon if it isn't used in the recipe. Thanks.
