Healthy Chicken Sandwich

Ingredients
- 2 Sourdough bread slices
- 4 oz raw chicken thigh
- 1/4 tsp turmeric powder (easy Thai-curry powder)
- 1/4 tsp ground coriander (easy Thai-curry powder)
- 1/4 tsp cayenne pepper (easy Thai-curry powder)
- 1/4 tsp ground cumin seeds (easy Thai-curry powder)
- 1 oz cucumber round slices
- 1/2 oz red onion slices
- 1 oz mango
- 1 tbsp mayonnaise
- 1 tsp grapefruit juice
- 1/2 oz fresh cilantro as garnish
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp ground black pepper

Combine salt, pepper, and the curry powder ingredients into a bowl.

Bedone and season the chicken thigh with the curry mix.

Add oil to a heated pan and fry the chicken for 15 minutes, until done.

Remove and transfer to a bowl.

Using the same pan, toast the bread slices on both sides for 2 minutes.

Remove and set aside.

Combine mayonnaise and grapefruit juice. Spread mayo into the sourdough slices (one side only).

Top with lettuce, cucumber slices, chicken, onion slices, mango slices, and fresh cilantro.

Top with the remaining bread slice.

Secure with 2 sandwich picks and cut in half.
