Baked Chicken Parmesan
Chicken Parmesan is an Italian classic that the whole family can enjoy. Because this version is baked it's not only quick and easy, but it's light on the calories. This chicken dish is great with pasta or as a sandwich.

Ingredients
- 5 tablespoons unsalted butter, melted
- 1 tablespoon dry mustard or Dijon mustard
- 3/4 cup dried bread crumbs
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon dried basil
- 8 chicken thighs, or 3 whole chicken breasts, bone in, split
Instructions
- Preheat the oven to 400 degrees F. Lightly grease a 9" x 15" baking dish.
- In a shallow bowl, combine the butter with the mustard.
- In another shallow bowl, blend together the bread crumbs, cheese, parsley, and basil. Dip the chicken pieces first into the mustard mixture, and then coat with the bread crumb mixture. Place skin side up in the baking dish.
- Bake, uncovered for 45 minutes.
