I am so glad I found this Baked Rosemary Chicken recipe. The thigh is my favorite part of the chicken, and I am always looking for new ways to prepare them. The flavor and texture combination in this recipe of the apples and rosemary is absolutely out of this world. I don't normally like shallots, but their flavor came through great. This recipe was a terrific break from the "same old" chicken for dinner. The swseet tart combination of the cider vinegar and apples, and the hint of honey mustard, the tender juicy thighs is remarkable. Bonus...its a one pot wonder.
