Beggars Oven Fried Chicken
Crunch into a piece of oven fried chicken tonight. This simple chicken recipe is cooked in the oven to give it that extra crunch that makes fried chicken so good. Perfectly seasoned, enjoy Beggars Oven Fried Chicken.
Ingredients
- 1/3 cup oil
- 1/3 cup butter
- 1 cup flour
- 1 teaspoon salt
- 2 teaspoons black pepper
- 2 teaspoons paprika
- 1 teaspoon garlic salt
- 1 teaspoon dried marjoram
- 8 to 9 chicken pieces, legs, thighs, breasts
Instructions
- Preheat oven to 375 degrees F.
- Place the oil and butter in a shallow cooking pan (a jelly-roll pan is perfect) and put in oven to melt. Set aside.
- In a large paper sack, combine the flour and seasonings. Roll the chicken pieces, 3 at a time, in the melted oil-butter mixture, then drop them in the sack and shake to cover.
- Place on a dish or wax paper. Place chicken in the pan, skin side down. Bake for 45 minutes.
- With a spatula, turn over and bake 5 to 10 minutes longer, or until top crust begins to bubble.
- Serve hot or cold, but the crust texture is better if chicken is not refrigerated before eating.

We made a double batch of this tonight, and it is a winner! We used chicken thighs (bone in, skin on), and rice flour. Otherwise we followed the recipe - and they were crunchy, moist and flavorful. They were pretty large, so we gave them about ten more minutes to cook through. This gave us a great payoff for minimum cost and effort. We'll be enjoying this one often!
