Chicken Paprika with Dumplings
Ingredients
- 2 Tbsp vegetable Oil
- 4 chicken breast halves, boned and skinned
- seasoned flour
- 16 ounces can mixed vegetables
- 1 cup chopped onion
- 2 cups chicken broth
- 1 bay leaf
- 1 cup packaged biscuit mix
- 1/4 cup milk
- 1/2 tsp thyme
- 2 Tbsp chopped parsley
- 3/4 cup sour cream
- 2 tsps paprika
Instructions
Yield: 4 Servings. Coat chicken with seasoned flour and saute in oil in heavy skillet over medium heat. Add onion; cover and cook five minutes. Drain canned vegetables, reserving liquid. Add liquid to chicken broth. Boil, then simmer Add bay leaf to chicken. Combine biscuit mix, milk, thyme, parsley and reserved vegetables. Drop batter to make 8 dumplings around edge of skillet. Cook 10 minutes; then cover and cook 10 minutes longer. Place chicken and dumplings on plate. Add sour cream and paprika to sauce; serve over chicken and dumplings.

Since my husband and I love chicken and dumplings I thought I would give this recipe a try. I made one modification-not adding the mixed veggies to the biscuit mix. I added carrots and celery in lieu of the veggies and used smoked paprika which gave the sauce a slight smoky flavor. I made my own chicken broth from the bones adding a teaspoon of Better than Bouillon for more flavor. All in all we liked the results very much. I also love the website !!
