    Chicken Saronno

    Add the flavors of India to your next meal with this indian chicken recipe. The complex flavors of curry and amaretto make this Chicken Sarrano a unique dining experience.

    Ingredients

    • 6 chicken breast halves, skinned, boned, cut in 3/4
    • 3/4 cup flour
    • 2 teaspoons curry
    • 2 teaspoons garlic powder
    • 1/2 teaspoon white pepper
    • Butter and oil
    • 1 pound mushrooms, sliced
    • 2 cups chicken broth
    • Zest and juice of 1 lemon
    • 1/2 cup amaretto liqueur
    • 2 tablespoons corn starch
    • 2 tomatoes
    • 1 pkg frozen green peas

    Instructions

    1. Mix flour, curry, garlic, and pepper.
       
    2. Dredge chicken in flour mixture.
       
    3. Cook in batches over medium heat in oil and butter. Add extra oil and butter if needed.
       
    4. Remove cooked chicken to a casserole and keep warm.
       
    5. Add mushrooms and saute about 5 min.
       
    6. Stir in lemon zest and juice, broth, and amaretto.
       
    7. Mix corn starch with a bit of water and use to thicken sauce.
       
    8. Return chicken and simmer 5 min.
       
    9. Peel, seed and dice tomatoes.
       
    10. Heat, but do not cook, the peas.
       
    11. Serve chicken mixture over cooked brown rice.
       
    12. Top with peas and tomatoes.
