"Italian cuisine has so many awesome dishes that every single time you can find something you have never tried before. Like this Chicken Sorrentino. Have you ever heard about it? I am pretty sure that the majority of you haven't. It's a fantastic chicken and eggplant dish which also includes, prosciutto, marinara sauce, mozzarella and Parmesan cheese. How does it sound? Awesome, right? That's what I call a perfect weeknight dinner. It is healthy too!"

Eggplant is a source of debate in our household. My wife loves it, and I'm at best indifferent to it. I don't remember any bad experiences with it as a child that would turn me off, so I think it simply boils down to personal taste. The rest of the recipe sounds absolutely delicious to me, and I'll probably make this up, though my wife can have my share of the eggplant.
