Coca Cola Chicken

Ingredients
- 1/2 cup chopped onion
- 1 tablespoon oil
- 4 boneless chicken breasts
- 1 (12 ounce) can cola
- 1 cup ketchup
- 1/8 teaspoon garlic powder
- 1/8 teaspoon pepper
- 1/8 teaspoon salt
- 4 1/2 teaspoons cornstarch
- 3 tablespoons cold water
Instructions
- Saute onion in oil until tender.
- Add chicken and brown lightly.
- Add ketchup, cola, garlic powder, salt and pepper.
- Cover and simmer over medium heat for 25-30 minutes or until juices run clear. If sauce needs to be thickened, blend cornstarch and cold water.
- Move chicken from pan to warm plate.
- Gradually add cornstarch mixture to sauce, simmer until thickened.
- Add chicken to pan to reheat, if needed.

This recipe seemed a bit basic and perhaps too sweet for my taste, so I added a generous dollop of soy sauce and seasoned rice vinegar, as well as carrots and sugar snap peas that I had on hand. No added salt. I preferred not to thicken the juices and cut the chicken breasts into thick slices to better absorb the sauce. It was great served over rice.

Hello, this was pretty good. I did a little different. I only had 4 thighs and I put it all in crock pot for several hours. After a few hours I took it all out of crock pot and put in oven. I used half coke and half pepsi (that's what I had). The broth was liquidy so poured it over the rice. MMMM good. Teenager didn't care for it. Myself and hubby liked it.
