NotesCooking Just for Two? You can prepare a much smaller casserole by dividing the ingredients in half and baking the dish in an 8-inch square pan. The cooking process remains the same.

This really is a simple recipe. And it's perfect for the summer, when I'd rather be outside on the deck than working in the kitchen. I'm not all that much of a zucchini fan (though, curiously I love noodles made from them with a spiralizer) and I'd like to try making this with broccoli substituted for the zucchini. I love the addition of the mozzarella cheese since it gives a nice extra dimension to the dish.
