    Fricasseed Chicken

    Ingredients

    • 1 whole chicken cut up
    • 3 teaspoons salt
    • 1 teaspoon sugar
    • 1/2 teaspoon black pepper
    • 3 cloves garlic
    • 2 stalks escallion
    • sprig of thyme
    • 2 tbsp. oil
    • 2 cups water or chicken stock
    • 1 tbsp. pickapeppe sauce
    • 1 1/2 tbsp. tomato ketchup
    • 1/2 lb. potatoes
    • 1/4 lb. carrots
    • 2 large onions

    Instructions

    Prepare chicken. Cut up, wash, drain and season chicken. Heat oil and add chicken. Brown just enough to stiffen chicken. Add water or stock, with Pickapeppa sauce. Rough chop vegetables, add to chicken and simmer for 15 minutes, stirring occasionally. Serve hot in gravy. SERVES 4-6
