Herb Roasted Chicken with Fresh Tomatoes
"I bought these amazing cocktail tomatoes this week, that is simply bursting with flavour. And what goes super well with tomatoes? Basil of course! Fresh herbs are something I always grow myself so they are really fresh. I used half of that green paste under the skin of the chicken and the remainder I just brush on all over the surface of the chicken. I added a little bit more of salt and pepper, (don’t forget to season the cavity of the chicken as well). Then I started baking it at high temperature for the first 30 minutes to crisp up the skin of the chicken, then lowered the heat, added in the tomatoes with the onions and finished cooking. The end result, a flavourful dish that will impress!"

Ingredients

- 5 to 6 large basil leaf
- 4 tablespoons freshly chopped parsley
- 4 garlic cloves
- Salt and pepper
- 2 tablespoons olive oil
- (1-1/2-pound) cocktail tomatoes (cut in half)
- 1 large onion (cut in chunks)
- 2 tablespoons olive oil
- Salt and pepper

Finely chop the basil, parsley and garlic to form a paste.

Add in the olive oil, salt and pepper.

Pat dry the chicken.

Generously salt and pepper the cavity of the chicken.

Using your fingers loosen the skin.

Use half of the paste and push under the skin of the chicken (doing the breast and legs).
