Jade Chicken
Ingredients
- 2 T light miso
- 3 scallions, chopped
- 1/4 t ginger, grated
- 1 T brown sugar
- 1 T soy sauce
- 12 chicken thighs
- 1/2 c dry white wine
- 3 T peanut oil
- 1 pound green, seedless grapes
Instructions
Mix the miso, scallions, ginger and soy sauce. Simmer for 5 minutes and cool. Marinate the chicken thighs overnight in the mixture, covered in the refrigerator. Next day add the wine to the marinading chicken. Drain the chicken pieces, reserving the marinade and wipe dry with paper towels. Heat a frying pan and add the oil. Saute the chicken pieces to a light brown. Add the marinade and turn the heat to medium. Cover and continue to cook for an additional 20 minutes. Add grapes to dish. Continue to saute until grapes are hot. Serves 4-6

I want to try this recipe, but I have no idea what miso is. Can you tell me what it tastes like or where it comes from? I am curious about the use of green grapes in the recipe. I have never used them with chicken, but I have had green apple and was very pleasantly surprised.
