Mango Chicken
Ingredients
- 1 sliced onion, sauteed
- 2 teaspoons crushed garlic
- 1/2 teaspoon chopped ginger (fresh).
- 1 whole chicken breast (both halves) cut 1 inch chunks
- 400 gms tinned mango slices
- 2 tablespoons mango juice
- Stone's Green Ginger Wine
- cooked rice
Instructions
In a wok fry sliced onion, crushed garlic, chopped ginger. When just starting to turn brown, add chicken chunks to pan and turn till outside turns white. Add mango slices 2 tablespoons of juice from can. Add a splash of Stone's Green Ginger Wine at this point but it is optional. Put on a lid and let simmer, stirring occasionally until chicken is cooked through, approx 10-15 minutes, but don't let it go tough. Chicken thigh fillets are also great for this.
