Mayo and Herb Roasted Chicken
"This mayo and herb roasted chicken is incredibly tasty and probably the juiciest chicken I have ever made, and if you know me, I eat a LOT of chicken! There is something about chicken, that makes this protein so versatile. And since this winter does not want to go away, (seriously what is it about that??? Is it just me or is this the longest winter ever?) All I want to do is stay in the house and cook, and then cook some more!"

Ingredients
- 1 whole chicken
- 1 cup mayo
- 1 teaspoon dry thyme
- 1 teaspoon dry oregano
- 1 teaspoon dry parsley
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- Black pepper to taste

In a bowl, mix the mayo with the thyme, oregano, parsley, onion powder, paprika, cayenne pepper, salt and the lemon zest.

Pat the chicken dry with paper towels.

Brush the mayo mixture on the entire chicken.

Place the chicken in an oven safe dish breast side up.

Insert the lemon quarters in the cavity.

Tie the legs with butcher’s string.
