I really like this combination of tastes, but I have never tried the Dijon and the peaches together. I am excited to taste the difference between peaches and citrus in chicken. I fell in love with chicken salad that uses green apples, so this combo sounds divine. The best part is that I get to dirty less dishes.

Blair, at The Seasoned Mom, has some great recipes and I can't wait to try this one! I think peaches (and apricots) are underutilized by most people in everyday cooking, as are the acids, like vinegars, limes, and lemons. I just discovered them in my 50s! But now I have a pantry and frig stocked with several. This recipe uses cider vinegar, a great compliment to peaches and chicken in this savory dish. I've never used the coconut palm sugar, but I'm game! Sounds like fun, and I love having an unusual ingredient that makes my family say, wow! this is great! What's in this!?!
