Quick Chicken Parmigiano
Chicken Parmigiano is a classic Italian dish. You can make a quick shortcut version at home with this easy recipe.
Ingredients
- 4 boneless chicken breast halves
- 1 egg
- 1/4 cup water
- 2 tablespoons olive oil
- Bread crumbs
- 1/2 pound mushrooms
- 1/2 cup chopped onion
- 1 green bell pepper, chopped
- 1 1/2 teaspoon crushed garlic
- 1 1/2 cup jarred spaghetti sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 350 degrees F. Wash chicken breasts. Beat egg and add water. Heat olive oil on low flame in frying pan.
- Dip breasts in egg/water and then coat with bread crumbs. Lightly saute coated breasts in olive oil, about three minutes on each side. Remove from pan.
- Using same pan, saute the mushrooms, onions and green pepper. Add crushed garlic. (You might need to add a little more olive oil to pan.) Saute all for about 15 minutes, then add spaghetti sauce.)
- Place chicken breasts in a medium-deep baking dish. Cover with sauce. Then cover with mozzarella cheese and bake for 35 minutes. Serve with pasta and Italian bread.
