Turmeric and Almond Chicken
Ingredients
- 2 tsps vegetable oil
- 1 medium onion, finely diced
- 1 small handful sultanas, coarsely chopped
- 2 tsps ground coriander
- 2 tsps ground cummin
- ground chilli (to taste)
- 1 chicken breast, chopped into small pieces
- 1 cup water
- 1/2 cup ground almonds
- 2 tsps turmeric
- 2 tblsp fish sauce
Instructions
Over medium heat, saute the onions and sultanas in vegetable oil until the onions are translucent. Add coriander, cummin and chilli and toss through the onions until the fragrance of the spices is released. Add the chicken breast, water, ground almonds and turmeric and stir well. Reduce to a simmer, add fish sauce and cook until chicken is cooked through and sauce thickens. Serve over rice with steamed vegetables.
