Cooking MethodMicrowave

Ingredients

  • 4 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1 1/4 cup all purpose flour
  • 1 cup sugar
  • 1/2 cup sunflower oil or any tasteless oil like grape seed
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup hot coffee
  • For the Chocolate Ganache:
  • 1/4 cup milk
  • 1 tablespoon butter
  • 1/3 cup dark chocolate buttons
  • 1 teaspoon natural vanilla extract

Instructions

  1. Mix in a bowl all dry ingredients including instant coffee if you use one.

  2. Add to dry ingredients eggs, oil and mix.

  3. Now add hot coffee and mix fast – it’s important because if you won’t, the eggs will become scrambled.

  4. Transfer the batter to oiled 9in(22cm) glass pan or English cake glass pan and microwave on high settings for 8 minutes.

  5. Melt all of the ingredients of the ganache in microwave. Mix it and cover the cake.

This cake does sound very good.I will try it,and let you know how it is. Weezy

The instructions are confusing. You said to add coffee to dry mix then you said to add the hot coffee to the liquid mix. Please explain the directions once again.

I think for the coffee in the dry mix,it is for the instant coffee(if using) and the water goes into the liquid mix. If using just hot coffee, add it with wet mix. At least that's how I read it. Weezy

The recipe doesn't list anything about coffee in the ingredients. How much hot coffee is used or if instant...how much instant and then water???

yes this recipe does say about coffee. It says to use one (1) cup of hot coffee.(I imagine it is supposed to be 8 ounce cup). But you are right,it does not give the amount of instant coffee,if used, but I imagine it will be one(1) teaspoon of instant coffee, and 8 ounces of hot water. Thank-you for your undivided attention. Weezy
