Kennebunkport Inn's The Falling Chocolate Cake

Ingredients
- 2 tablespoons cocoa powder
- 3 ounces chocolate, finely chopped
- 2 eggs
- 3 ounces sugar
- 1 1/2 ounce cake flour
Instructions
- Heat oven to 350F degrees.
- Butter 3 5-inch round baking dishes and then dust with cocoa powder.
- Melt the chocolate and the butter in a double boiler, , then with an electric mixer, beat the eggs and sugar until it is light and fluffy.
- Fold in the chocolate butter mixture.
- Add the flour and then mix just until incorporated.
- Spoon the batter into the prepare dishes, filling no more than half full.
- The batter will hold for up to two days after it has been made.
- Bake for 8-10 minutes on 350F degrees or until the top has a slight crack and the sides have set.
- To serve, carefully invert-baking dish on the plate and cake should slide out. Serve with fresh berries or whipped cream, ice cream and chocolate or vanilla sauce.

The butter to melt with the chocolate was not even listed in the ingredient list. I used my own judgment. There isn't enough batter to put 1/2" in each dish. I baked for 17 minutes and still no crack in the top. I will be serving these tonight and will let you know the results. I consider myself as advanced cook, but this recipe threw me.
