Lazy Woman's Cake

This eggless chocolate cake is an Amish recipe that's super easy to whip up. Lazy Woman's Cake is made by busy Amish women when they don't have time to fuss over a complicated recipe. All the ingredients are mixed together in one bowl and baked for 30 minutes. Although it's a cake recipe from scratch, it's almost as easy as throwing together a boxed mix, but much more delicious. This one tastes great with a layer of frosting on top.

A vegan chocolate cake recipe is nice to have. More and more people I know are vegans or can't have eggs or dairy. But, these people deserve a good cake too. The vinegar would help with the rise that normally an egg would. The baking soda is what give it a slightly red color.
