- 3 cups whole milk
- 1 cup heavy cream
- 4 cinnamon sticks
- 2 1/4 teaspoons vanilla
- 1 teaspoon grated nutmeg, plus extra for garnish
- 5 eggs
- 2/3 cup sugar
- 3/4 cup dark rum
- 1/2 cup caramel syrup
- 1 tablespoon sea salt

In a large saucepan, combine the milk, cream, cinnamon, vanilla, and nutmeg. Bring to a boil over medium heat. As soon as it bubbles, remove from heat and let sit for 5 to 10 minutes.

Using a stand mixer fitted with the paddle attachment, beat the eggs and sugar on medium-high speed until fully combined. Pour the egg mixture into the milk and whisk quickly until fully combined. Add the rum, caramel syrup and salt. Whisk to combine.

Pour the eggnog into 6 glasses, leaving a bit of room at the top. Garnish with whipped topping and nutmeg.
