Digestive Biscuits
Digestive biscuits, aka whole wheat shortbread cookies, are crisp, crumbly, and totally delicious. We love shortbread cookies for their buttery flavor and crumbly texture, and this recipe just builds on that with the addition of flavorful whole wheat ingredients. If you like traditional shortbread cookies, or the digestive cookies you buy at the supermarket, then you're going to love this recipe!
Yields3 dozen
Ingredients
- 1 1/2 cup whole wheat flour
- 1/2 cup rolled oats
- 1/4 cup wheat germ
- 1/4 cup sesame seeds
- 1/4 t. baking soda
- 1/4 t. salt
- 2 T. dry milk powder
- 1/4 cup sugar
- 1/2 cup butter
- 1/3 cup cold water
- 1 t. vanilla

Instructions

Combine dry ingredients, then cut in butter so mixture resembles crumbs.

Combine water and vanilla and drizzle over dry mixture. Blend until dough can be packed together.

Roll on floured surface or between two sheets of waxed paper until dough is about 1/8-inch thick.

Cut into circles or other shapes and bake on a greased cookie sheet at 325 F for 20 to 25 minutes. Make sure the oven doesn't get too hot. They should not brown.

Cool and store in airtight container. Makes about 3 dozen cookies.
