Grandma's Cowboy Cookies

- 3 cups quick cooking oatmeal
- 1 cup chocolate chips
- 1 cup chopped pecans
- 2 teaspoons vanilla
- 1 cup shortening
- 1 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cup flour
- 1 cup sugar

All the ingredients in this recipe rank up at the top of my favorite list. There is no way that this cookie will not be one of my "new" favorites. Because of my love for sweets, this one will have to wait until the next family gathering so that I will not devour them all alone.

I was wondering why these were called Cowboy Cookies. LOL. And after reading the ingredients list I know why they are so delicious. LOL. Grandma's Cowboy Cookies should not be made all that often as they will surely help increase your waist but well worth one try. Thanks for the beautiful pics with the recipe.

I have yet to come across a "Grandma" cookie recipe that I didn't like, and these Cowboy Cookies live up to the standard of excellence that I have come to expect from cookies designated as such. One thing is for certain, back in Grandma's day they knew how to make delicious cookies. This recipe is easy to follow and made with simple ingredients resulting in extraordinary, moist and flavorful cookies.
