Italian Ricotta Cookies
"Italian ricotta cookies, soft and tender lemon biscuits made with ricotta cheese and butter. These Italian lemon ricotta cookies, or biscotti alla ricotta are just like Nonna’s. They are super easy to make and the lemon icing drizzle and the sprinkles are totally optional, although a nice touch both. I think you can try and use cream cheese instead of ricotta, but the result will not be quite as tender and soft. This recipe makes about three dozen cookies; halve the ingredients if you like - but you won't want to!"
