Vanishing Oatmeal Cookies (soft)
Ingredients
- 1 cup margarine
- 1 teaspoon ground cinnamon
- 3 cups quick oats
- 1 cup firmly-packed brown sugar
- 2 eggs
- 1 1/2 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt (optional)
- 1 cup raisins (optional)
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
Heat oven to 350 F. Beat together margarine and sugars until creamy. Add eggs and vanilla; beat well. Combine flour, baking soda, cinnamon and salt; add to creamed ingredients and mix well. Stir in oats and raisins; mix well. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10 - 12 minutes or until golden brown. (Do not overcook.) Cool 1 minute on cookie sheet; remove to wire rack. Yields 3 1/2 dozen cookies. Notes: High altitude, increase flour by 1/4 cup.
