Butterscotch Delights
Butterscotch Delights are just ... delightful! This butterscotch cookie recipe is very unique. It's full of delicious ingredients such as butterscotch pudding mix, butterscotch chips, yellow cake mix, and old-fashioned oats. There are so many goodies wrapped up in one little cookie! These cookies are special enough to serve as a Christmas cookie, but they can really be made anytime your butterscotch craving kicks in. If you like cookies, cake, or pudding, then you'll have a good time with these butterscotch cookies.

Ingredients
- Nonstick cooking spray
- 1 (16.5-ounce) box yellow cake mix
- 1 (3.4-ounce) box instant butterscotch pudding mix
- 4 ounces cream cheese, softened to room temperature
- 1 egg
- 1 tablespoon vanilla extract
- 1/2 cup canola oil
- 1 cup old-fashioned oats
- 1 (11-ounce) package butterscotch chips

Preheat oven to 350 degrees F.

Spray cookie sheet with non-stick cooking spray and set aside.

Pour 1/2 box of cake mix into mixing bowl. Add entire package of instant pudding and cream cheese. Beat on low with an electric mixer for 1 minute until cake mix, pudding and cream cheese are combined.

Add egg, vanilla and oil and beat on medium speed for 2 minutes. Add rest of cake mix, oats and chips and mix by hand, using a rubber spatula.

Drop by teaspoonfuls on prepared cookie sheet. Bake 10 to 12 minutes until golden; cookies will be pale with light brown edges around the bottom. Remove from oven and cool 5 minutes; then transfer to cooling rack and cool completely.
