Lemon Macaroons
Betty Crocker's delicious lemon cake mix isn't just for cake. I use it to make these awesome macaroons - my whole family loves them, and you will too!

Ingredients
- 1 18.25-ounce box Betty Crocker SuperMoist Lemon Cake Mix
- 1 egg
- 1 8-ounce carton Cool Whip, thawed and stirred
- powdered sugar to coat
Instructions
- Preheat oven to 350F degrees.
- Stir together cake mix, egg, and Cool Whip.
- Form into 1-inch balls.
- Drop balls into a bowl of powdered sugar and roll in sugar to coat.
- Place on a greased cookie sheet and bake at 350F for 8 to 12 minutes.

Hi Effey. Most Americans would think of coconut because that's what we see around us, but the french and italian macaroon is a sweet based on almond paste (ground almonds), egg whites, and sugar.

@Effey - A macaroon is a type of light, baked confection, described as either small cakes or meringue-like cookies depending on their consistency. Most usually do involve coconut, but it is not a requirement. -The Editors of RecipeLion
