Monster Cookie Energy Balls
Cookies without the oven? Yes, please! When you want something FAST but not boring, these energy balls are a MUST. Chock full of oats, nuts, seeds, raisins and chocolate, these LOADED cookie bites are perfect for lunch, an after-school snack or anytime! Plus, you can totally customize them with whatever mix-ins you enjoy.

You need a large bowl, a big spoon or rubber spatula, a small cookie scoop or spoon and measuring cups and spoons.

Ingredients

- 1/2 cup + 2 tbsp (161 g) creamy natural peanut butter or any nut/seed butter, plus extra if needed
- 3 tablespoons (45 ml) honey
- 1 teaspoon vanilla extract
- 1/2 cup (45 g) rolled oats
- 1/4 cup (25 g) ground flaxseeds or almond meal
- 2 tablespoons (20 g) hemp seeds or chia seeds (optional)
- 2 tablespoons (12 g) unsweetened finely shredded coconut (optional)
- 1/4 cup (50 g) M&M's® minis candy or mini chocolate chips
- 1/4 cup (36 g) raisins

In a large bowl, stir together the peanut butter, honey and vanilla.

Add the oats, ground flax seeds, hemp seeds and coconut (if using). Stir until all the ingredients are well combined. You can use your hands to squish everything together if the dough gets too thick to stir with a spoon.

Mix in the chocolate and raisins. Scoop up tablespoon-sized balls of dough and then roll them in your hands until smooth. If the dough is too dry to roll, stir in another 1 to 2 tablespoons (16 to 32 g) of peanut butter.

Store the balls in an airtight container in the fridge for up to 2 weeks (if they last more than a day!).
Chef Tip:
Don’t let honey get you into a sticky situation. Simply grease your measuring cup or spoon first with spray oil or by spreading a little oil around inside the cup with your fingers, and then watch the honey slide right out.
