Herbed Pot Roast

Ingredients
- 2 pounds beef pot roast, 3 to 4 inches thick
- 2 tablespoons fat
- 2 cups tomatoes, canned
- 1/4 cup dry red or white wine
- 3/4 cup onions, chopped
- 1/4 cup carrot, finely chopped
- 1/4 cup celery, finely chopped
- 1/2 teaspoon garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1/4 teaspoon pepper
- 2 tablespoons all-purpose flour
- 1/4 cup water
Instructions
- Brown meat in fat in skillet.
- Add meat to slow cooker, along with tomatoes, wine, onions, carrot, celery, garlic, salt, oregano, basil, and pepper.
- Cover and cook on low for 10 to 12 hours, or until meat is cooked through.
- Combine flour and water to make a paste. Add paste to slow cooker to help thicken the sauce. Let cook, uncovered, an additional 30 to 45 minutes.
