Caesar Chicken

For a bright, spring or summer day, there's no better lunch to make than this Caesar Chicken recipe. In your slow cooker, the chicken and caesar dressing come together to make a simple weeknight meal that is simply packed with flavor. These chicken breasts are best served on top of romaine lettuce with tomatoes and warm Italian bread.

Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup chicken broth
- 1 (12-ounce) bottle creamy Caesar dressing
- 1/2 cup shredded Parmesan cheese
- 4 romaine lettuce leaves
- 1 cup grape tomatoes, halved
- 8 (1-inch) slices crusty Italian bread, toasted
Instructions:

Lightly spray the insert of a 6-quart slow cooker with cooking spray.

Place the chicken in the slow cooker. Sprinkle with the salt and pepper and add the broth.

Cook for 6 hours on Low or for 3 hours on High. Drain the liquid from the slow cooker.

Pour the Caesar dressing over the chicken, then sprinkle the Parmesan on top.

Cook on Low for 1 hour or on High for 30 minutes.

On each plate, place 1 chicken breast on 1 or 2 romaine leaves, scatter a few grape tomato halves on top, and serve with 2 slices of toast.
