Cabbage and Potato Casserole

Ingredients
- 2 tablespoons butter
- 2 medium onions, chopped
- 1 small cabbage, shredded
- 2 green apples, thin sliced
- 1 1/2 teaspoon white wine vinegar
- 1 1/2 tablespoon sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups chicken broth
- 1/2 cup leftover mashed potatoes
Instructions
- In large skillet, over medium heat, melt the butter and sauté onion til golden brown.
- In slow cooker, make alternate layers of cabbage and apple.
- Add the onion, vinegar, sugar, salt and pepper.
- Mix the broth into the mashed potatos to make a thin sauce and pour it over the cabbage.
- Cover and cook on high setting for 3-4 hours.
