Chicken Cacciatore

Ingredients
- 3 to 4 lb. frying chicken
- 1 large green pepper, cored and sliced thin
- 1 Spanish onion, sliced thin
- 1 clove garlic, crushed
- 1 jar spaghetti sauce
- 1 teaspoon mix of oregano, basil, garlic powder (optional)
- 1 Tbsp. Parmesan Cheese (optional)
- Salt and pepper to taste
Instructions
Remove skin and excessive fat from chicken, rinse and pat dry. Season chicken inside and out with herbs, salt and pepper. Place half of the sliced pepper and onion in the bottom of the slow cooker. Place the chicken in the pot with the cavity pointing up. Lay the rest of the pepper and onion slices and the garlic over the chicken and inside the cavity. Pour spaghetti sauce overall. Cook 1 hour on high, then 8-10 hours on low. Remove the chicken to a serving platter and degrease the sauce if needed. Serve with your favorite pasta and lots of crusty bread.
