    Grandma Millie's Slow Cooker Minestrone Soup

    Ingredients

    • 1 cup fully cooked ham, diced
    • 1 pound corn chickpeas
    • 1/2 cup onion, minced
    • 1 clove garlic, minced
    • 1/2 cup carrots, diced
    • 1/2 cup celery, diced
    • 1 package frozen spinach, chopped
    • 1 can (about 10 ounces) tomatoes
    • 1 potato, diced
    • 2 tablespoons dried parsley
    • 1 quart chicken broth
    • 1/2 cup elbow macaroni, uncooked
    • grated Parmesan cheese for garnish

    Instructions

    1. Combine ham, chickpeas, onion, garlic, carrots, celery, spinach, tomatoes, potato, parsley, and chicken broth in a slow cooker.  Add water if chicken broth does not cover all ingredients.  Cover and cook on high for one hour, then switch to low and cook for 6 to 8 hours, or until carrots are tender.
       
    2. Add macaroni and let cook on low for 30 minutes. 
       
    3. Serve with grated cheese on top.

    I think this sounds really great. One could add green beans, Sweet Italian mild sausage, pre cooked. Zucchini and or cabbage to this recipe.
