Slow Cooker Pork Casserole

Ingredients
- 1 1/2 pound lean pork
- 2 tablespoons oil
- 1 green capsicum
- 2 large onions, sliced thin
- 1/2 pound mushrooms, sliced
- 3/4 ounce flour
- 10 ounces dry white wine
- 5 ounces chicken stock
- 2 tablespoons tomato puree
- 1 teaspoon sage (optional)
- salt and pepper, to taste
- 4 tomatoes, peeled and chopped
Instructions
- Cut the pork into cubes, put into frying pan and brown lightly in the oil.
- Add chopped capsicum, thinly slice onions and sliced mushrooms and cook for 3 minutes.
- Stir in the flour and cook 2 minutes.
- Add the wine, stock, tomato puree, sage (if using), salt and pepper to taste and bring to the boil.
- Peel the tomatoes, remove the pips and chop the flesh, add to the frying pan.
- Then place all of mixture into the slow cooker. Cover and cook on low for 7 to 8 hours.
