    Slow Cooked Steak Fajitas

    Experience the flavors south of the border in your own home with these Slow Cooked Steak Fajitas. The steak is seasoned with cilantro and lime to give that fajita taste. After trying these, you'll be saying adios to your other slow cooker recipes.

    Ingredients

    • 1 1/2 pound beef flank steak
    • 1 onion, sliced
    • 1 green pepper, sliced
    • 1 red pepper, sliced
    • 1 jalapeno chile pepper, chopped
    • 2 tablespoons cilantro
    • 2 cloves garlic, minced
    • 1 teaspoon chili powder
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1/4 teaspoon salt
    • 1/4 teaspoon ground red pepper
    • 1 (8-ounces) tomatoes, chopped
    • 12 flour tortillas

    Instructions

    1. Cut flank steak into 6 portions to fit into slow cooker.
       
    2. In any size slow cooker, combine meat, onion, peppers, cilantro, garlic, chili powder, cumin, coriander and salt. Add tomatoes. Cover and cook on low for 8-10 hours (or on high 4-5 hours).
       
    3. Remove meat from slow cooker and shred. Return meat to slow cooker and stir.
       
    4. To serve fajitas, spread meat mixture on tortillas and add favorite toppings. Toppings: Sour cream, guacamole, shredded cheese, salsa (or use whatever toppings suit you).
