Stupid Slow Cooker Breakfast Potatoes
It doesn't get much simpler than these Stupid Slow Cooker Breakfast Potatoes, you won't find an easier potato recipe. Slow cooker recipes using potatoes are a great idea, especially if your oven is occupied by the main dish.
Cooking MethodSlow Cooker
Ingredients
- 4 medium to large potatoes, sliced
- 1 onion, peeled and chopped
- 1 tablespoon butter
- 4 slices bacon, cooked and crumbled
- 4 ounces Cheddar cheese, grated
Instructions
- Layer all ingredients in slow cooker: Potatoes, butter, onion, bacon, cheese.
- Repeat with a second layer. Cook on High 8-10 hours. Done!

Both this recipe and Rachel Ray's are the same and instruct to cook on high for 8-10 hours. Luckily I woke up after 3 hours and saved them. I think the recipe is in error. It should be 8 hours on low. After 3 hours I had potatoes and cheese leather. Please correct this recipe.

I cooked it on high, according to the recipe, and woke this morning not to a yummy potato breakfast, but to a blackened sizzling disaster.

Contrary to the oversensitive commenters here, I appreciate the use of "stupid" in the title, conveying the simplicity of the recipe -- much like the "...For Dummies" series of books.

Maybe it's a generation thing but I, too, dislike the use of "stupid." To describe a recipe as "easy" or "simple" would suffice, or perhaps even just list it as "slow cooker ________." Sorry, but using "stupid" to be playful doesn't work.

Why do you have to name all your recipes "stupid"? Sounds very unappetizing and, well...stupid!

@cidergeorge, You can melt the butter, but you don't have to. It will melt in the slow cooker. The important thing is to include the butter when you're adding the ingredients in the slow cooker. I hope this helps! --Editor of RecipeLion
