Sweet and Spicy Chicken in Curry Sauce

Ingredients

  • 4 to 6 chicken pieces
  • 1 pinch salt
  • 2 tablespoons oil
  • 2 medium onions
  • 15 grams curry powder
  • 15 grams flour
  • 1 tablespoon vinegar
  • 15 grams sugar
  • 1 tablespoon apricot jam
  • 25 grams sultanas
  • 300 milliliters of the reserved chicken stock

Instructions

  1. Put the chicken pieces in a saucepan with the salt and cover with hot water, add salt and simmer until the chicken is tender.
     
  2. Drain off the liquid and reserve. Remove the meat from the pieces in large pieces.
     
  3. Slice the onion thinly and cook in the oil until soft and golden.
     
  4. Stir in the curry powder and flour and cook for 2 minutes, stirring well.
     
  5. Measure the reserved liquid and add to the onions. Stir well and heat gently until the sauce is smooth. Add the vinegar, sultanas sugar and jam. Put the chicken into the slow cooker, pour over the curry sauce and stir well.
     
  6. Cover and cook in your Crockpot on HIGH for 30 minutes, then on LOW 4 - 5 hours.

There are different kinds of curry powder, so be sure to try it first and get one you like. Curry is actually a blend of several spices, so premixed curry powders can taste very different. If you've eaten curry you like at an Indian restaurant, you might be able to make friends with a server and find out if they use a premix brand or mix their own.

Why are they using grams and milliliters as units of measurement? I have been cooking for more than 50 years and have never sued these.
