Nothing beats that tangy lemon icing with the soft, sweet, fluffy muffin. It’s just such a good combo, but just hold your horses because there is a way to make your muffins extra soft, light and fluffy!! So, it turns out that the acidic nature of yoghurt helps to make cake batter rise and create a sturdy structure. On top of that, I also read that yoghurt helps to keep cakes nice and moist......."

These little muffins looks so moist and delightful in the photo. Do you think I could use sour cream instead of the Greek yogurt? I am not a yogurt fan, I prefer to use cream cheese or sour cream instead of the yogurt in my desserts. I love the drizzle you made for these muffins. I think the tart of the lemon mixed with the sweet of the icing and the nutty of the poppy seed will blend so well together.
