    Cornbread

    Ingredients

    • 1 c flour
    • 1 c cornmeal
    • 1 Tbl baking powder
    • 1 tsp Salt
    • 1/2 c milk
    • 1 egg
    • 1/4 c oil

    Instructions

    Put oil in 9-10" diameter cast iron frying pan in 425F oven. Mix dry ingredients in heatproof bowl, beat egg and milk, pour into dry mix and stir just until combined. Pull pan from oven (oil should be very hot), pour oil into dough (should sizzle), mix oil into batter, pour in pan, put in oven. (last sentence should take less than one minute, plan where you will set down that pan in advance!) Bake about 30 min or until toothpick comes out clean, eat hot with butter, honey, and/or fruit jam. Alternate grease: Fry several strips of bacon for required grease, further option; leave the bacon in the pan and pour the batter on top. My flour is whole wheat but doesn't have to be.
